Humboldt Student Food Collective

Humboldt State University

Arcata, California

This student team is in their third year of organizing, and close to opening a co-op student food truck or concession trailer on campus. They hosted the Fall California Student Sustainability Coalition Convergence this year.

The Humboldt Student Food Collective is a non-profit coalition of HSU students, staff, and faculty who want to bring better food to HSU. We believe the dining options currently at HSU do not adequately meet the needs of our eco-conscious and health-aware student body. We want to open a cooperatively-run food cart by 2014, the Humnivore Café, to fill this niche. Our operation will use a progressive business model that allows us to consider the socio-environmental bottom line in all we do, not just monetary profit. Our workforce will be a mix of paid staff, work-traders, and volunteers.
